Farmers markets are kind of like garage sales for cooks. People wander around, looking at tables full of merchandise, looking for just the right bargain. Most people seem to look more than they buy, but those who do purchase something leave with the satisfaction that they are taking something home they will use very soon and enjoy. Unlike a garage sale item, it’s not going to sit around gathering dust, until you place it in your own garage sale later on. Oh no, this bag of produce is going straight to the kitchen where it will soon become part of a fine dining experience or at least a nice casserole. 

These onions were found at the farmer’s market by the old sugar refenery in Sugar Land, TX. Depending on where you’re from, you could call these spring or green onions.
