The first vegetable most kids will want to eat is the carrot. Why? Maybe it’s because you can hold it like candy, it doesn’t taste too bad and it’s crunchy.
Or maybe it’s because Mom doesn’t have to peel it, remove the core, wipe up the juice or some other high-maintenance activity. It carries well in a lunch box, it’s colorful and did I mention that it’s crunchy? To this day, it’s the first vegetable I seek out in my salad (there’s probably some hidden psychosis I should be worried about here).
